While frying in the air fryer, the miso marinade coating the salmon filets will form a crust on the surface that’s a wonderful combination of salty and sweet. If you want to create a wonderful savory contrast to the soy, sesame oil, and ginger flavors, you can swiftly cook the bok choy in the air fryer after the fish has been removed, and let the edges of the leaves char slightly!

The Needed Ingredients

This recipe yields four servings and requires the following ingredients:

  • 4 six-ounce salmon fillets with the skin on
  • 1 large scallion
  • Two teaspoons of freshly grated ginger
  • A quarter-cup and a teaspoon of low-sodium soy sauce
  • 2 and a half tablespoons of mirin
  • 2 and a half tablespoons of white miso
  • 4 four-ounce baby bok choy cut lengthwise
  • Half a teaspoon of salt
  • 2 teaspoons of toasted sesame oil
  • Cooking spray

The Marinade Is the Key

To prepare the marinade, thinly slice the green tops of the scallions and set them aside. Chop the scallion bulbs finely and place them in a small bowl. Mix in the soy sauce and ginger. Put two tablespoons of the soy sauce mixture in a medium bowl and set aside. Add miso and mirin to the mixture in the small bowl. Whisk to get a smooth consistency.

Preparing the Delicious Salmon

Arrange the salmon on a rimmed baking sheet and cover them evenly in the miso marinade for 10 minutes. Set the air fryer to 375 Fahrenheit. Coat the fry basket with cooking spray and transfer the fish to it in a single layer. Insert a cooking thermometer in the thickest part of the filets and cook until it registers 125°F, 7 to 8 minutes.

In the meantime, toss the bok choy with some salt and sesame oil. Once the fish is out of the air fryer, place the bok choy in the fryer until tender and lightly charred – 5 or 6 minutes. Toss the fried bok choy with the reserved soy sauce in the medium bowl. Arrange and serve the salmon and bok choy with the green scallion tops sprinkled on top!
