Focaccia

  • 4 cups all-purpose flour
  • 1 ½ tsp instant yeast
  • 1 ½ tsp kosher salt
  • 1 ¾ cups water (lukewarm)

Step #1: Dough Preparation

Mix the ingredients for the focaccia in a medium-sized bowl. As it’s a no-knead dough, you don’t have to knead it. However, kneading just a few times to ensure all ingredients are mixed thoroughly is a good idea. Let it sit for at least an hour at room temperature. You can use it immediately or put it in the fridge overnight.

Step #2: Press Out the Dough

Film a baking sheet on a pan and spread 1 tablespoon of olive oil evenly over the sheet. Spread the dough, patting it out until it fills the pan. Let it rest uncovered for half an hour.

Step #3: Caramelize the Onions Caramelize the onions with 2 tablespoons of butter or extra virgin olive oil. Add salt and stir occasionally. Cook for up to 40 mins.

Step #4: Top the Dough

Brush 1 or 2 tablespoons of olive oil over the dough and scatter onions on top. Add the brie and the cranberries, and the rosemary.

Step #5: Bake Bake for about 25 minutes, until the crust is golden brown and the cheese is fully melted.
